Suzy’s Joyful Mediterranean-Fashion Salsa blends tangy-sweet pomegranate arils with juicy cherry tomatoes, contemporary herbs, and a touch of sumac for a taste explosion you gained’t neglect.
Elements
1 cup cherry tomatoes, quartered
½ cup contemporary pomegranate seeds (arils)
1 or 2 medium shallots, minced
½ cup (packed) roughly chopped contemporary flat-leaf parsley
½ cup (packed) roughly chopped contemporary mint leaves
1 jalapeño pepper, minced (non-compulsory)
1 medium garlic clove, minced
1 teaspoon sumac Kosher salt and floor black pepper
¼ cup contemporary lemon juice (from 1 massive lemon)
Further-virgin olive oil
¼ cup pine nuts (non-compulsory)
Pita chips or crostini, for serving (see web page 275)
Instructions
1. In a medium bowl, mix the quartered tomatoes, pomegranate arils, shallots, parsley, mint, jalapeño (if utilizing), and garlic. Season with the sumac and a pinch of salt and black pepper (about ½ teaspoon every). Add the lemon juice and a beneficiant drizzle (about 2 tablespoons) of the olive oil. Toss to mix and put aside for 10 minutes or so to permit the flavors to meld.
