I resisted the urge to incorporate a chopped salad recipe in every of the seasons, though I like them a lot. They’re each hearty and contemporary and are a great use of some pantry staples. This recipe begins with salami cooked till crisp after which sautéed with chickpeas and spices so as to add a heat, gentle crunch.

To make supremes (citrus segments minimize out of their membranes), minimize off the tops and bottoms of the fruit so the fruit can sit flat on a reducing board. Use a pointy paring knife to chop off the peel and pith, following the curve of the fruit. Working over a medium bowl to gather the juices, minimize between the membranes to launch the fruit segments and drop them into the bowl. Squeeze the membranes to launch extra juice.
